Wine Dinners in 2010


Each month, glass wine bar celebrates our passion by featuring some of our favourite wines! Enjoy each wine throughout the month at the glass wine bar, paired with your choice of main, for only $35 (perfect for a quick lunch, or even pre-theatre). We also invite you to join us for our monthly 5 course Wine Dinner. The first Wine Dinner for 2010 will be in March, but you can reserve your spot now for a fantastic evening of food, wine and great company!

Pooles Rock Wine Dinner
with Chef Andrew Clarke, from Rock Restaurant in the Hunter Valley cooking alongside Luke Mangan and his team to showcase the best Hunter Valley produce on the menu, all complimented by Pooles Rock Wines.
Wednesday 14 April, 6.30pm $160 per person

The wine team at glass brasserie is proud and passionate about providing guests with a first-class wine experience; we encourage guests to explore and enjoy all kinds of wine from different parts of the world. The huge, 600+ selection wine list offers an ever evolving range of boutique and famous producers of Australian wines as well as rare and difficult to acquire bottles from throughout the world. We cater for all budgets with 150ml ‘by the glass’ prices ranging from around $10 - $40 and bottle prices from $34 - $13,000. Daily “specials & Bin Ends” are also on offer.

When glass brasserie opened within the newly refurbished Hilton Sydney in July 2005, the Hotel was determined to do things differently, to inspire, to go back to the drawing board and re-invent its approach to food and wine. Since then the sommelier team has continued to enhance the list, increasing the selection slowly and improving the information included within the list, which is in constant evolution, and the team are always searching for rare & museum wines such as the oldest listed bottle, an 1873 vintage Madeira.

The current wine team consists of Head sommelier, Kim Bickley, Assistant Sommelier Mauro Bortolato and three Junior Sommelier/Wine Waiters, so there is always a knowledgeable person on hand to offer advice, and any detailed information people may request. All of the wine team are members of the Australian Sommeliers Association.

The cellars are kept at optimal temperatures and humidity levels which are continually monitored by our on hand cellarman. Our wines are served in premium quality European stemware and decanters (Schott Zwiesel and Riedel).

Our mission is to continue developing the wine list and the team, to evolve and proudly provide the best wine experience in Sydney.
