Natalie MurphyChef Natalie started her career at Glass Brasserie at the age of 19, where she honed her culinary skills over 10 years. A true pillar of the Glass Brasserie team, Natalie oversees our team of chefs and meticulously ensures that every dish meets the highest standard before reaching our guests.
Her philosophy when it comes to dining is that of simplicity and quality. Natalie sources only the best ingredients and uses simple flavours to enhance the natural beauty of her produce and meat. She believes in share-style dining and great food as the facilitator of some of life’s best moments.
HEAD SOMMELIER
MAURO BORTOLATOOriginally from Italy, Mauro grew up in the countryside where his family owned a number of small vineyards. Mauro made the move to Australia in 1999 and has been with glass brasserie since 2005. He has travelled through France, Spain, Italy, California and Australia, tasting some of the finest drops around the globe.

ANDREA BRANDI
Born in San Benedetto del Tronto, Italy, Andrea grew up immersed in the world of hospitality. In 2014, Andrea moved to Australia, where he continued to build his hospitality career. Today, Andrea is the Restaurant Manager at Glass Brasserie, where he ensures that every guest enjoys a seamless and memorable dining experience. His commitment to exceptional service and attention to detail reflect both his Italian hospitality heritage and his dedication to excellence in the industry.
