With sweeping views of the historic Queen Victoria Building, Glass offers a dining experience that celebrates the artistry of local, seasonal, and premium produce.

Curated by Head Chef Natalie Murphy, our menu is a celebration of seasonality and flavour, crafted to inspire connection and conversation over unforgettable meals.

Glass Brasserie is also home to one of Sydney’s most distinguished wine collections. With over 3,500 carefully curated bottles encased in a dramatic floor-to-ceiling wine wall, our list reflects over two decades of expertise by Head Sommelier Mauro Bortolato. Whether you’re revisiting an old refined vintage or discovering a new favourite, the Glass wine experience is as exceptional as the food.

SUSTAINABILITY PRACTICES

We proudly source local and seasonal ingredients, working closely with our trusted local suppliers and producers to bring the finest quality to your plate. Each week, Chef Natalie personally visits local markets to handpick premium produce that inspires our ever-evolving menu.

In addition to our commitment to fresh, local ingredients, we also care for our own hive of bees. The honey and honeycomb produced right here contribute to our dishes and are a sweet testament to our dedication to sustainability.
